Gluten Free Egg Roll Bowl
- 1 lb. ground turkey
- 16 oz. package of coleslaw
- 1/4 cup GF soy sauce
- 1 tsp. ground ginger
- chopped green onions, for topping
- Brown ground turkey in a large pan.
- Mix in the bag of coleslaw and cook until coleslaw is tender.
- Mix in soy sauce & ginger. Cook 2-3 more minutes.
- Top with green onions.
When you’re gluten free, finding safe food to eat at any Chinese restaurant is a tricky game to play. I’m still learning the ins and outs of it myself. One easy way around that dilemma – make your own Chinese food at home!
Added to my list of gluten free woes is the loss of a beloved childhood favorite: egg rolls.
Who doesn’t love egg rolls? A deep-fried delicacy filled with all kinds of goodness and unfortunately, all kinds of gluten.
I actually started making this recipe long before I started eating gluten free, but I think I appreciate it all the more now. Sometimes I’ll spoon this egg roll bowl into a few small corn tortillas to try and imitate an egg roll. It’s definitely not the same thing, but it’s an alternative I’m okay with.
Even without the corn tortillas, this recipe is great on it’s own! It has all the flavors of an egg roll without the gluten-filled shell.
